Water and its Characteristics
~ Cohesion: attraction of water molecules to each other
~ Polarity: when the centroid of the positive charge is different from the centroid of the negative charge.
~ Heat Storage: water can hold a lot of energy in it. it takes a long time to warm up and cool down.
~ pH: on the pH scale water is 0 so it is neither acidic or basic.

~ Monomer: a molecule of low molecular weight capable of reacting with identical or different molecules of low molecular weight to form a polymer.
~ Polymer: a large molecule composed of many subunits.
~ Hydrolysis: the breakdown of a compound when it reacts with water.
~ Condensation polymerization: the opposite of hydrolysis because it release water molecules instead of using them.
~ Carbohydrates: any of a large group of organic compounds occurring in foods and living tissues and including sugars, starch, and cellulose
