Healthy Breakfast - Grape Nut Muffin
Ingredients
- 1-1/4 cups flour
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 2-1/4 cups Grape-Nuts Flakes
- 1 cup fat-free milk
- 1 egg, slightly beaten
- 1/2 cup chunky applesauce
- 1/2 cup firmly packed brown sugar
- 1/2 cup raisins
- 2 Tbsp. margarine, melted
Directions
- Stir together the first 5 ingredients.
- Stir beaten egg into milk then add applesauce and stir well.
- Mix wet ingredients into dry stirring well.
- Stir in melted butter, cereal, and raisins.
- Let stand 5 minutes.
- Fill greased muffin tins 2/3 full
- Bake at 400 degrees for about 20 minutes.
Healthy Dessert - Fruit Salad with Lemon-Cinnamon Syrup
- 1 cup white sugar
- 1/2 cup water
- 3 1-inch strips of lemon zest
- 1 cinnamon stick
- 2 tablespoons lemon juice
- 4 mango pitted, peeled, cut into chunks
- 4 white peaches pitted, and cut into bite size pieces
- 2 granny smith apples peeled, cored and cut into slices
- 4 (6 ounce) containers fresh raspberries
- 1/4 cup finely chopped fresh mint
- 2 tablespoons lemon juice
- Place the sugar, water, lemon zest, cinnamon, and 2 tablespoons of lemon juice into a small saucepan. Bring to a boil; reduce heat to medium-low and simmer 10 minutes. Strain the syrup through a mesh strainer; refrigerate until cold.
- Place the mango, peaches, apple, raspberries, mint, and 2 tablespoons of lemon juice into a mixing bowl. Pour the chilled syrup over top and gently stir to combine.
Healthy Lunch - Ham and Cheese Tortilla Roll-Ups
Ingredients
- 1 1/2 cups reduced-fat shredded Cheddar cheese (6 ounces)
- 1/4 cup reduced-fat mayonnaise or salad dressing
- 1/4 cup fat-free sour cream
- 1 can (11 ounces) Green Giant® Niblets® vacuum-packed whole kernel corn or Mexicorn® whole kernel corn with red and green peppers, drained
- 10 fat-free flour tortillas (6 to 8 inches in diameter)
- 10 slices (1 ounce each) deli fully cooked ham
- Cilantro sprig, if desired
- Mix cheese, mayonnaise, sour cream and corn.
- Top each tortilla with 1 slice ham. Spread 2 tablespoons corn mixture over ham. Top with cilantro. Roll up.
