Go for the Greens is 3/18 through 3/22! There will be a daily announcement with the featured green veggie at lunch. The District theme is the Avocado-Guac On! Chef Nels will be making guacamole at lunch on Friday the 22nd. Wear green that day.
You probably know from guacamole, avocado toast or maybe the occasional avocado smoothie that the creaminess of a ripe avocado can’t be beaten. After mashing it with a spoon, it becomes silky, buttery, and ideal for adding richness in any number of applications. Avocados also offer plenty of healthy fats. Avocado has a subtle flavor that can easily be swayed savory or salty (or even sweet!) depending on what seasonings you add to it. The mild flavor also allows it to easily adopt bolder flavors like cheddar and Gruyère.

Fruit and Veggie Time Savers
- Pre-Cut Vegetables- Greatest time saver EVER. Roast them, sauté them, throw them in soup or a salad.
- Roast Everything- Roasting brings out the natural sweetness in vegetables. Cut everything in uniform pieces, toss in extra virgin or avocado oil and roast at 400 until veggies are soft and slightly browned.
- Make a Veggie Pancake- Shred your veggies, squeeze out the excess liquid, and combine them with a little flour or almond flour, egg, salt, and pepper, and mix. Pan-fry over medium-high heat until brown on both sides.
- Spiralize-Use a spiralizer tool to make veggie noodles or find veggie zoodles or spirals in both the fresh produce aisle and frozen section. Sweet and golden potatoes, zucchini, carrots, beets, cucumber, apples, pears or plantains are all great places to start.
- Chopped Salad Kits- Chopped salads provide crunch and variety of colored and nutritious veggies that are appealing. Roasted seeds and even quinoa toppings can offer nutty flavor.

Pistachio Pesto!
For a different take on pesto, try the Pistachio Pesto Pasta recipe from Weelicious. It uses pistachio nuts and spinach instead of pine nuts and basil. Just make sure your pistachios are unsalted otherwise it will be too salty.
