Escherichia Coli (E. Coli)

a bacteria often found in the environment, food, and intestines of people and animals; can cause diarrhea, urinary tract infections, respiratory infections, pneumonia, and other illnesses

Avocado Egg (Breakfast)

Ingredients:

1/2 Avocado

1 Egg

Salt

Pepper



Directions:

-Preheat over to 425 degrees F

-Take half of an avocado and spoon out the insides to make the hole bigger

-leave some avocado on the edges

-carefully crack an egg into the hole

-Season with salt and pepper

-bake for 15 minutes

-Top with anything you like

Zucchini Spaghetti alla Marinara (Lunch)

Ingredients:

(marinara sauce)

2 ripe tomatoes, chopped

1/2 (8 oz) can tomato paste

1/2 cup water

2 tablespoons simple syrup

2 tablespoons chopped garlic

2 tablespoons balsamic vinegar

1 tablespoon olive oil

1 teaspoon sea salt


(spaghetti)

4 zucchini, peeled and spiralized


Directions:

-blend tomatoes, tomato paste, water, simple syrup, garlic, balsamic vinegar, olive oil, and sea salt together in a high-speed blender until smooth.

-place spiralized zucchini in a bowl

-add sauce

Ratatouille (Dinner)

Ingredients:

2 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons dried parsley

1 eggplant, cut into 1/2 inch cubes

salt

1 cup grated Parmesan cheese

2 zucchini, sliced

1 large onion, sliced into rings

2 cups sliced fresh mushrooms

1 green bell pepper, sliced

2 large tomatoes, chopped


Directions:

-preheat oven to 350 degrees F

-coat bottom and sides of a casserole dish with olive oil

-heat olive oil in a pan and cook garlic until lightly browned

-mix in eggplant and parsley; cook until eggplant is soft; add salt to taste

-spread eggplant mixture across bottom of casserole dish

-sprinkle with parmesan cheese

-layer zucchini, onion, mushrooms, bell pepper, and tomatoes with cheese in between each layer

-bake for 45 minutes

Vanilla-Lemon Berry Parfait (Dessert)

Ingredients:

1 cup plain low-fat yogurt

2 tablespoons honey

zest of 1 lemon

1 tablespoon fresh lemon juice

3 cups mixed berries

fresh mint leaves (optional)


Directions:

-mix together honey, lemon zest, and lemon juice until combined

-add mixed berries and gently mix

-in a bowl or a glass, add some yogurt, then the berry mixture and repeat

-add mint leaves for garnish
