Bitter herbs (maror) raw horse radish green onions or romaine lettuce symbolize the bitterness of slavery
Fruit and nuts (haroset) represent mortar used during slave times
Green herbs (karpas), parsley celery represents spring and renewal of life. Usually dipped in salt water that represents tears
Lamb (zeroah) shank bone represents sacrifice made on eve of the exodus of egypt
Hardboiled egg (beltzah) offerings for the temple gods
Also on every seder table you will find 2 more things:
Wine - drink 4 cups throughout the night to commemorate the redemption of jewish people
Dry unleavened bread, called matzo. the bread the israelites made when then were told to leave egypt by the pharaoh. They didn’t have time to let the break even so they made it flat
