Native Dishes



Note:Frikadeller are commonly eaten for lunch or dinner in Denmark.Ingredients:1/2 pound veal
1/2 pound pork
2 tablespoons flour or 1 cup bread crumbs
2 cups milk
1 egg
1 large onion
Salt, to taste
Pepper, to taste


Open-Faced Sandwiches

Note:These traditional sandwiches are often served for lunch or dinner.Ingredients:8 large lettuce leaves
6 eggs, hard-cooked and cut into quarters
12 small shrimp, shelled, cooked, and deveined
3 ounces smoked salmon
3 ounces smoked herring or 3 ounces whitefish, thinly sliced
2 ounces boiled ham, sliced
2 ounces rare roast beef, sliced
2 ounces Danish blue cheese, cut into cubes
2 ounces Danish hard cheese, cut into cubes
3 medium tomatoes, cut into wedges or slices
3 small apples, cored, cut into wedges, and dipped in lemon juice
3 small oranges, peeled and sectioned
1/2 cup sliced onion
24 pimiento-stuffed green olives
6 dill pickles, cut lengthwise into quarters
1/3 cup 2 teaspoons mayonnaise
1/3 cup 2 teaspoons prepared mustard
1/3 cup 2 teaspoons horseradish
1/3 cup 2 teaspoons seafood cocktail sauce
12 thin slices rye bread, 1/2 ounce each
4 1/2 ounces crisp bread


Pancake Balls

Note:This is a traditional Christmas dish in Denmark.Ingredients:4 cups flour
6 tablespoons sugar
1 1/4 teaspoons salt (optional)
8 teaspoons baking powder
8 eggs (separated)
1 1/2 cups cream
2 cups milk

Danish Puff

Note:Denmark is famous for its pastries.Ingredients:Pastry:
1 cup flour
1/2 teaspoon salt
1/2 cup unsalted butter
2 tablespoons ice water
1/2 cup unsalted butter
1 cup water
1 teaspoon almond extract
1 cup flour
3 eggs
1/2 cup confectioners' sugar
4 tablespoons cream
1 tablespoon unsalted butter, softened
1 teaspoon vanilla
Almonds, sliced

Rice Pudding

Note:In Danish folklore, whoever receives the whole almond in their portion of rice pudding on Christmas Eve is believed to be the next one to get married.Ingredients:1 cup uncooked white rice
1/2 cup sugar
1/2 teaspoon salt
5 cups milk
1 whole almond
1 teaspoon almond extract (or vanilla)
Ground cinnamon for garnish

Herbs and Spices

Allspice: a small brown berry: flavor resembles a combination of clove, and nutmeg. Used in desserts.

Anise: a spice, has a licorice flavor. used in beverages and sometimes different cookies.

Basil: a herb , aromatic green leaf used in tomato dish or egg dishes.

Chives: a herb ,hollow, green top of a value onion , used in salads.

Cinnamon: a spice found from the bark of trees. used to make powders , teas , and liquid extracts.
