Our Diverse Cuisine
Collard greens and Cornbread Muffin
This appetizer of collard greens and cornbread represents Henrietta Lacks, a poor Southern tobacco farmer. A simple yet, delicious meal represents the simple, yet profound life lived by Henrietta Lacks. A common dish is the 1950's in the Southern United States it is a perfect way to start a meal. A light, moist cornbread muffin with a serving of fresh, leafy collard greens is sure to make ones mouth water!
Codfish and Ackee
This official Jamaican dish is fresh from the shores of Jamaica shores. It is cooked with the fresh ackee fruit from the tropical trees in Jamaica.
In the book, "The Other Wes Moore" Wes Moores grandparents and mother originally from Jamaica. Although they now live in New York, they still enjoy the comfort of the traditional dishes of where they came from.
Kebab
Choosing the kebab was an easy choice for an appetizer, because of the fact that it is a very common way to start an Iraqi meal, and will provide a lot for an army serviceman in need of nutrients. The kebab will provide a good amount of protein, as well as some fat and potassium to help fuel the long hot days on duty in Iraq. When working such long, hard days, need proper nutrition to keep going and press on when it’s needed most.
Jalebi
For dessert try our Jalebi. It is a fried funnel cake soaked in our delicious warm syrup. It is a popular dish in the Middle East, and perfect way to end your meal. Also a good way to get carbs to a army captain, like Luis Montalvan in the book, "Until Tuesday"
