holiday celebrations
As many people in the United States begin to plan for fall and winter holiday celebrations, CDC offers the following considerations to help protect individuals, their families, friends, and communities from COVID-19.

- Carving or decorating pumpkins outside, at a safe distance, with neighbors or friends
- Decorating your house, apartment, or living space
- Having a virtual Halloween costume contest
- Having a Halloween movie night with people you live with
- Having a scavenger hunt-style trick-or-treat search with your household members in or around your home rather than going house to house

Thanks-Giving
Lower risk activities
- Having a small dinner with only people who live in your household
- Preparing traditional family recipes for family and neighbors, especially those at higher risk of severe illness from COVID-19, and delivering them in a way that doesn’t involve contact with others

- Shopping online rather than in person on the day after Thanksgiving or the next Monday
- Watching sports events, parades, and movies from home
October 25, World Pasta Day
INGREDIENTS
- 6 slices thick-cut bacon (about 6 ounces) or pancetta, cut into 1/4" strips
to taste Kosher salt
- 12 oz pasta
- ½ cup unsalted butter, divided
- 1 bunch scallions, trimmed, thinly sliced
- 2 ears corn, shucked kernals removed
- to taste freshly ground black pepper
- ½ cup grated Parmesan cheese
- 1/3 fresh basil, torn
- 1 pinch crushed red pepper flakes
- to taste freshly squeezed lemon juice
DIRECTIONS:
Bring a large pot of well-salted water to a boil. Cook Pasta (12 oz) until 1 minute shy of al dente, according to the package directions. Drain, reserving 1/2 cup (or more) of pasta water.
- Fry bacon in a large skillet over medium-high heat, stirring occasionally, until crisp. Using a slotted spoon, transfer bacon to paper towels to drain.
- Add Scallions (1 bunch) and a pinch of Kosher Salt (to taste) and cook until soft, for 3 minutes.
- Add 1/4 cup of reserved pasta cooking liquid—dip a measuring cup into the pot if the pasta is still boiling—and all but 1/4 cup of Corn (2 ears) ; simmer until corn is heated through and almost tender, for 3 to 5 minutes.
- Season with Kosher Salt (to taste) , and Freshly Ground Black Pepper (to taste) , transfer to a blender (or food processor), and purée mixture until smooth, adding a little extra water if needed to get a thick but pourable texture.
- Heat the same skillet over high heat. Add Unsalted Butter (1/3 cup) and let melt. Add reserved 1/4 cup corn and cook until tender, 1 to 2 minutes. Add the corn purée and cook for 30 seconds to heat and combine the flavors.
- Reduce heat to medium. Add pasta and 1/4 cup of the reserved pasta cooking water, tossing to coat. Cook for a minute, then add a little more of the pasta cooking water if the mixture seems too thick. Stir in the Grated Parmesan Cheese (1/2 cup) , Fresh Basil (1/3 cup) , the Crushed Red Pepper Flakes (1 pinch) , and Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste) .
- Sprinkle with Lemon Juice (to taste) and add more salt if necessary. Transfer pasta to bowls and crack Freshly Ground Black Pepper (to taste) over the top.
October 28, National Chocolate Day
INGREDIENTS:
- 1 cup cold butter cut into small cubes
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 1/2 cups cake flour
- 1 1/2 cups flour
- 1 tsp cornstarch
- 3/4 tsp baking soda
- 3/4 tsp salt
- 2 cups chocolate chips
- 2 cups walnuts, roughly chopped
DIRECTIONS:
- Preheat oven to 410 degrees.
- In a large mixing bowl, cream together cold cubed butter, brown sugar, and sugar for 4 minutes or until creamy.
- Add eggs, one at a time, mixing well after each one.
- Stir in flours, cornstarch, baking soda, and salt. Mix until just combined to avoid overmixing. Stir in chocolate chips and walnuts.
- Separate dough into large balls and place on lightly colored cookie sheet. They are bigger than you think! You will fit 4 cookies on one large cookie sheet. The dough makes 8 extra large cookies.
- Bake for 9-12 minutes or until golden brown on the top. Let them rest for at least 10 minutes to set.
*Levain Bakery has stated they don't use vanilla extract in their cookies. If you would like to add vanilla extract, I would suggest adding 1 tsp when adding the eggs to the batter.
October 29, National Oatmeal Day
INGREDIENTS
- 1/2 cup steel cut oats
- 2 cups almond milk
- 2 TBSP shredded coconut
- 1 tsp almond or peanut butter
- 2 tsp honey or agave syrup
- 1 TBSP coconut cream, optional
DIRECTIONS
- Bring oats, almond milk and shredded coconut to a boil.
- Let it simmer on medium-low heat for 5 to 10 minutes.
- Add peanut butter, honey or agave syrup, and coconut cream (if using). Stir well and cook for a minute more for the peanut butter to melt. The oatmeal should thicken considerably.
- Remove from the heat, cover with a lid and leave it at room temperature for at least 6 hours.
- Eat as is, or transfer oats into two lidded containers or mason jars, seal tight and keep in the fridge for up to a week.
