News Highlights
New Pick Up Day and Extended Pick Up Hours! Starting this week, pick up going forward will be Wednesdays from 1pm to 6:30pm in Suwanee. I'm looking forward to welcoming our former Buford members to our Suwanee location. In case you haven't heard, I am merging our Buford Co-op with our current Suwanee Co-op. Pick up will be at our Suwanee location 1300 Peachtree Industrial Blvd, Suite 1104, Suwanee 30024 at Cultured Traditions. The online market for ordering will open up as normal on Friday mornings and will close on Sundays at 6pm. Don't worry - I will send plenty of reminders! I'll need them too since I've had a Tuesday market for the past 7 years and Thursday market for almost a year.
Buford Memberships are transferred If you were a member at Buford Locally Grown your membership has been moved to Suwanee Whole Life Co-op if you already had an old account on www.suwanee.locallygrown.net If you don't have an account yet on the website please create one. You will not be able to order unless you have an active account on the Suwanee market site.
Fresh Harvest Produce Baskets - Don't forget to make your swaps by Friday (tomorrow) 2pm https://freshharvestga.com/ FH is the only vendor that you have to order via their website. Please contact them directly if you have questions about the produce baskets.
Jars - Cedar Rock Dairy - Please make sure to return your clean jars weekly. If you order raw Jersey cow milk in glass, you have to have jars to fill already at the farm! Sam has been very kind to lend jars to folks that are missing them but he can longer do that. If you don't have glass jars, your order will arrive in plastic and you will have to pay the additional upcharge for plastic since that is an additional cost to him. Thank you for your understanding. If you need extra jars they are available on the market. Please contact Sam if you have any questions (770) 490-5190
New Sections in Newsletter- "Community Corner"- events, searching for job, and "Recipe of the week" Please send your submissions by Wednesdays. I can't wait to see some of your favorite recipes using some co-op ingredients!
PLEASE HELP! Volunteers Needed at pick up!

Fitting Out
(A fellow co-op member, Michele, sent this to me and I thought I would share. I have spent most of my life "fitting out" until I started this co-op and realized there are so many of us. I am so glad I have a community that shares my same concerns about health and our food system. Know that your support is making a difference! )
I wonder if we all had time to share our stories, that they might be similar and we have all been branded that one weird friend who is picky about their food.
I wonder when I see families at the mall food court, seemingly enjoying what cannot be considered part of a healthy diet, are the parents aware that every bite we take changes our gene expression and our DNA. I wonder why they are neither concerned about the quantity or the quality of the food. If it is true that the food we eat, becomes our body. I can imagine as time marches on, what the future holds for those families.
It seems that as a collective, we are part of some insane science experiment we do not care to participate in. Fortunately, through this process of fitting out, none of us have to be lab rats.

Recipe of the Week
Sausage, Kale and Bean Soup Recipe
This is an easy soup that is really satisfying. A cozy meal for a cold, winter evening. Serve with a salad.
Author: Katie Kimball
Recipe type: soup, main
Ingredients
- 2 Tbs. Extra-virgin olive oil, avocado oil or other high quality fat
- ½ or 1 lb. bulk Italian sweet or hot sausage, or (any ground meat and add your own seasonings)
- 1 medium onion, chopped
- 2-3 carrots, chopped
- 1 large potato, chopped ( I leave peels on)
- 2 cloves garlic, chopped
- 1 bay leaf
- 2 cans white beans, drained and rinsed
- salt and pepper
- 4 c. fresh kale (or other leafy green like spinach)
- 2 quarts chicken bone broth or stock
- Grated Parmigiano-Reggiano or Romano, to pass at table
Instructions
- Heat medium soup pot over medium-high heat (medium-low if using EVOO!). Add the oil and sausage and brown.
- Add veggies, bay leaf and beans. Season to taste with salt and pepper.
- Cook 5 minutes to soften veggies.
- Add greens and wilt. Add stock and cover.
- Raise heat and bring to a boil. Reduce heat and simmer 15 minutes. Serve with grated cheese for topping.
Any ground meat can be transformed into homemade sausage with the right seasoning blend. Adjust spice to taste with cayenne.
You can leave the peels on the potatoes for nutrients, and only use organic potatoes.
Allow the crushed garlic to rest for 7 minutes before heating for optimal health benefits; don’t overcook.
