Vietnamese Rice Paper Rolls

Ingredients
Carrot (grated)
Cucumber (seeds removed, finely sliced)
Red cabbage (shredded)
Mint leaves
Rice paper (buy in the Asian section of supermarket)
Vietnamese dipping sauce (buy in the Asian section of supermarket)
Cucumber (seeds removed, finely sliced)

Vietnamese dipping sauce (buy in the Asian section of supermarket)
Method
1. Place 1 sheet of rice paper into a bowl of warm water for 20 seconds.
2. Drip the excess water from the sheet.
3. Place rice paper sheet onto a chopping board.
4. Place some carrot, cabbage and cucumber at one end of the sheet.
5. Add a piece of mint.
6. Roll end of rice paper sheet over the fillings.
7. Fold the two ends into the middle.
8. Roll up until you have closed the roll.
9. Dip into Vietnamese dipping sauce.
