Yummy Recipes from Staff
Mrs. Woodcock's Frozen Chocolate Peanut Butter Banana Bites
3 Bananas - Ripe but still firm
1/4 cup Peanut Butter - or your favorite nut butter
10 oz - 280 g Dark Chocolate chopped - you can also use chocolate chips
2 tsp Coconut Oil - optional but recommended
Cut banana into slices (about 1/4 inch each). Set aside half of the slices and arrange the other half on a baking sheet lined with parchment paper. Heat peanut butter in a microwave on low/medium for about 30 seconds to 1 minute, stirring in between, until it's smooth and easily spreadable.
Spoon about one heaped 1/4 teaspoon (up to 1/2 tsp if the banana is large) on the banana slices you arranged on the baking sheet. Top with the other half of the banana slices you set aside earlier. Freeze for two hours.
When the Banana sandwiches are frozen, prepare the chocolate. Place chopped chocolate (or chocolate chips) in a microwave-safe bowl along with the coconut oil (it helps the chocolate melt and stay smooth).
Microwave on low/medium heat in 30 second bursts, stirring in between each, until chocolate is fully melted and glossy (watch carefully so the chocolate doesn't burn).
Prepare another baking sheet with parchment paper. Take two or three bites out of the freezer. One by one dip them in the melted chocolate and using two forks, "roll" them in chocolate to cover all sides.
Remove excess chocolate and place on prepared baking sheet. Repeat with remaining frozen sandwiches. Place the chocolate covered bites back in the freezer until set. Once they are set, you can transfer them to a container. Store in the freezer. What a fun treat!!!
Papa Frank's Taco Meat Recipe
......Weekly favorite at Mrs. Pedelty's house......
1 1/2 lb Lean Ground Beef
1 Tbsp Oregano
1 Tbsp Cumin
* 2 Tbsp Chili Powder
2 Cloves Garlic (Crushed)
1/4 cup Ketchup
1/4 cup Olive Oil
Salt & Pepper
Fry meat and drain. Add oil and spices and stir completely. Cook over medium heat for 5 minutes. Add ketchup. Simmer with low heat for 10-15 minutes. Stir often.
*Add extra chili powder for spicier meat.

Did you know that there is a Lost Sock Memorial Day? There is and it happens to be May 9th. It is a day dedicated to your drawer full of unmatched socks. Spend time on this day searching for those missing socks, and in good "Memorial" spirit, spend a minute to reflect on those that are still missing :)
Don't forget that MOTHER'S day is May 10th. Make sure you do something special for your mom ... make her lunch, fold and put away the laundry, or just give her 5 minutes of peach and quiet. HAPPY MOTHER'S DAY to all the mom's out there.
May 14th is Dance like a CHICKEN day. All of those people who LOVE to do the Chicken Dance ... this is your day. All ya gotta do is dance like a chicken.....with or without the music. LOL
NATIONAL CHOCOLATE CHIP DAY!!! Who does not love this day??? (those that don't like chocolate of course) If you love chocolate chips then why not grab your mom, dad, brothers and sisters and head to the kitchen for some family time baking. YUM YUM!!!
