Cooked Creamy Ceasar- Style Dressing
Ingredients
1/2 cup vegetable oil
1 clove garlic, slightly crushed
2 EGG YOLKS
2 Tbsp. fresh lemon juice
2 Tbsp. white wine vinegar
1/4 tsp. dry mustard
1/8 tsp. Worcestershire sauce
Directions
Step 1COMBINE oil and garlic in jar with tight fitting lid. REFRIGERATE several hours or overnight.
Step 2WHISK egg yolks, lemon juice, vinegar, mustard and Worcestershire in small saucepan until blended. COOK over very low heat, stirring constantly, until mixture bubbles at the edges. REMOVE from heat immediately; let cool 15 to 20 minutes.
Step 3REMOVE garlic from oil; discard. ADD egg yolk mixture to oil in jar. SHAKE until blended. REFRIGERATE, covered.
Apple- Bran Pancakes
Ingredients
6 EGGS
1 cup milk
3 Tbsp. vegetable oil
1 cup shredded wheat bran cereal
1 cup whole wheat flour
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 cups finely chopped peeled apples (about 2 medium)
Directions
Step 1BEAT eggs, milk and oil in large bowl until blended. STIR IN cereal; let stand until moistened, about 2 minutes.
Step 2MIX flour, baking powder, cinnamon and salt in small bowl. ADD to egg mixture; stir just until dry ingredients are moistened. FOLD IN apples and pecans.
Step 3HEAT lightly greased large nonstick skillet or griddle over medium heat until hot. Reduce heat to medium-low. POUR 1/4 cup portions of batter into skillet; cook until golden brown, turning once.
Crepes
Ingredients
1 cup milk
1/2 cup water
2 EGGS
1 EGG YOLK
1 Tbsp. sugar
1/4 tsp. salt
1 cup all-purpose flour
1/4 cup (1/2 stick) butter, melted
Melted butter for brushing pan
Directions
Step 1WHISK milk, water, eggs, egg yolk, sugar and salt in medium bowl just until combined. WHISK in flour until smooth. Gently WHISK in 1/4 cup melted butter.
Step 2BRUSH 10-inch nonstick skillet lightly with melted butter; heat over medium-high heat until hot. LIFT skillet from heat and quickly POUR IN 1/3 cup crêpe batter, tilting and swirling pan to cover bottom evenly. RETURN pan to heat. COOK until bottom is light brown, about 60 seconds.
Step 3Carefully TURN crêpe over in pan. COOK second side until light brown, about 30 seconds. REPEAT to cook remaining batter, stacking crêpes on a plate with a piece of waxed paper between them.
