January and February
Sewing Seeds
Eventhough it is cold, some vegetable seeds can be planted directly into the soil including Asian Greens, Lettuce, Radish, Spinach. Later in January try Beets, Bok Choy, Carrots, Collards, Kale, Kohlrabi, Mustard, Peas (English, Sugar, Snap), Rutabaga, Turnip. Just follow the planting directions on the package.
Planting Plants
Transplants are plants started indoors and allowed to mature a bit before planting in the garden. This time of year, transplants of Artichoke crowns, Asian Greens, Asparagus crowns, Bok Choy, Broccoli, Brussels Sprouts, Cabbage, Cauliflower, Collards, Kale, Kohlrabi, Leeks, Lettuce, Mustard, Onion sets and Spinach can be moved to the garden. Herbs are another good addition to the garden. Herbs which can be translanted in the winter include: Calendula, Chervil, Chives, Cilantro, Dill, Parsley, Echinacea, Feverfew, Oregano, Rosemary, Sage, Sorrel, Thyme.
Starting Seeds
If you want to get a headstart on warm weather veggies, try making some transplants of your own. Tomato and pepper seeds can be started indoors, if given enough light. Once they are strong enough and the conditions are right for planting, they can be moved outside.
