Educated: a Memoir - Tara Westover wasn’t your garden variety college student. When the Holocaust was mentioned in a history class, she didn’t know what it was (no, really). That’s because she didn’t see the inside of a classroom until the age of seventeen. Public education was one of the many things her religious fanatic father was dubious of, believing it a means for the government to brainwash its gullible citizens, and her mother wasn’t diligent on the homeschooling front. If it wasn’t for a brother who managed to extricate himself from their isolated—and often dangerous--world, Westover might still be in rural Idaho, trying to survive her survivalist upbringing. It’s a miraculous story she tells in her memoir Educated. For those of us who took our educations for granted, who occasionally fell asleep in large lecture halls (and inconveniently small ones), it’s hard to grasp the level of grit—not to mention intellect—required to pull off what Westover did. But eventually earning a PhD from Cambridge University may have been the easy part, at least compared to what she had to sacrifice to attain it. The courage it took to make that sacrifice was the truest indicator of how far she’d come, and how much she’d learned. Educated is an inspiring reminder that knowledge is, indeed, power. The Recipe Box
Summer always seems to be a great time to get back in the kitchen and get creative. The meals this time of year are nice and light. Here is a favorite or two that the Thorson clan enjoys:
Chicken Sandwich Mix
CHICKEN SANDWICH FILLING - Marietta
5 half breasts, cooked*
1 healthy teaspoon curry powder or to taste
3/4 c mayonnaise
2 rounded T sweet pickle relish
1 c celery Salt & pepper
2/3 c chopped almonds or cashews or pecans
Chop celery a little then place all ingredients in Cuisinart. Give it a few pulses until mixed (or you can shred the chicken and mix well with a fork if you like it chunky instead of like a spread - that is how I like it!) May be used in filling for croissant, pita bread, or regular bread. Great on Saltines or pita chips too!
ADD ADDITIONAL SEASONINGS ACCORDING TO YOUR TASTE!! Serves 6 or more. *I use shredded chicken found at Safeway in the deli area - this is packaged in the deli and placed in a refridgerated display; the chicken comes from their leftover rotisserie chickens... really delicious and easy to use in this recipe.

COCONUT OATMEAL COOKIES (these simple cookies are to DIE for... crispy and chewy goodness. Great with a scoop of ice cream when you need a quick dessert for guests. Don't over bake - pull them when they are lightly golden brown)
1 c flour
½ t baking powder
½ t salt
½ t baking soda
1/3 c shortening
½ c white sugar
½ c brown sugar
1 egg, beaten
1 t vanilla
1 c flake coconut
½ c rolled oats
Sift dry ingredients (I don't own a sifter - I place my dry ingredients in a handheld colander and tap it lightly over a bowl to sift - works great). Cream shortening, add sugars, beating until light and fluffy
Add egg and vanilla. Add rest of ingredients. Mix thoroughly. Shape dough in ½ inch balls, gently press a little.
Place on ungreased cookie sheet. Bake 10 min. @ 350 degrees. Makes 3 doz.
