Hamachi
Either eaten cooked or raw, the Japanese amberjack or Yellowtail is considered to be the most luxurious. It's oils have a clear and sweet aftertaste which is accompanied with a bold taste of the flesh.
Suzuki
Striped sea bass or rockfish on rice.
Tobiko
Called Flying Fish roe, it has small fish eggs or caviar on the top. It has a red orange color, a mild smoky or salty taste, and a crunchy texture.
Kappa Maki
A maki roll is the most basic form of sushi, consisting of cooked vinegared rice combined with other ingredients such as seafood, vegetables and sometimes tropical fruits. The kappa means cucumber so this is a cucumber roll.

Red clams on rice.
Unagi
Freshwater eel on rice.
Spicy Tuna
Made with roe, tuna, rice, and seaweed.
Ika
Made with squid and rice.
