Gyromitra esculenta

Gyromitra esculenta, also called brain fungus or false morel, is a fungus from North America and North Europe. This usually grows in sandy soils under coniferous trees in spring and early summer. The fruiting body is a brown or pink cap with a shape like a brain. That can reach 10 cm high and 15 cm wide.

The fungus can be toxic and mortal when you eat crude, but in places like Scandinavia, Eastern Europe and the Great Lakes of North America is a popular food. In Spain is prohibited the sale.

In Finland, the people eat Gyromitra in tortillas, in soups and in stir-fries.
