What should you do this weekend, you ask?! Well let me just tell you, Baldwin County has two great events happening right outside your back door!
NCAA Beach Volleyball - Gulf Shores
Eight of the country’s best beach volleyball teams will dig into the white sand beaches of the Alabama Gulf Coast May 5-7. Be right there with them when the champions are crowned on Sunday May 7. Featuring 55 sponsoring schools, beach volleyball is the fastest-growing NCAA sport. Five collegiate courts and five practice courts will be set up on the sand, as well as bleachers and court side seating for the volleyball enthusiasts in attendance. It’s better than watching on television! You can see all the action, on and off the sand, and feel the intensity of the players, coaches and fans.
Hot Air Balloon Festival - Foley
The Gulf Coast Hot Air Balloon Festival, presented by Tanger Outlets in Foley, welcomes more than 30 hot air balloonists from across the country. Enjoy the floating works of art as they grace the skies of South Baldwin County on Friday and Saturday. Get up close and personal as the hot air balloons and their pilots light up the evening skies at the nightly balloon glows, held Friday and Saturday night. Balloons are ONLY visible at dusk and dawn (weather permitting)!! Guests enjoy free, fun entertainment featuring something for every member of your family. Spread out your blanket, grab an ice cold drink and enjoy a variety of live music daily, from country to rock and roll. General admission is FREE!

Literature:
Let us enjoy reading this story of The Cat and The Fox.
A cat and a fox were once discussing about hounds.
The cat said, "I hate hounds. They are very nasty animals. They hunt and kill us".
The fox said, "I hate hounds more than you". .
The cat asked, "How do you save yourself from hounds?"
The fox replied, "There are many tricks to get away from hounds".
The cat asked "Can you say what your tricks are?"
"They are very simple", said the fox. He added, "I can hide behind thick bushes. I can run along thorny hedges. I can hide in burrows. There are many more such tricks".
Now it was the turn of the fox to ask the cat about her tricks.
The fox asked, "How many tricks do you know?"
The cat replied, "I know just one trick".
The Fox sneered, "Oh! How sad! You know only one trick? What is your trick?"
The cat was about to answer. But, she found a flock of hounds fast approach. She said, "I am going to do it now. Because the hounds are coming".
Saying these words, the cat ran up a nearby tree safe from the hounds. The fox tried all his tricks but the hounds out beat him. "My one trick is better than all his tricks", said the cat to herself.
Restaurant:
This place is good at serving Asian flavored mexican foods. In a funky styled restaurant like this you get to sit outside on the patio if you so choose. This place serves at the usual speed but with a good outcome. The food tastes good and is served not quick but not slow but the service is good with all smiles!
Recipe: Strawberry Crepes
- 3 eggs
1/2 cup milk
1/2 cup water
3 tablespoons butter, melted
3/4 cup all-purpose flour
1/2 teaspoon salt
1 (8 ounce) package cream cheese, softened
1 1/4 cups sifted confectioners' sugar
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
1 cup heavy cream, whipped
4 cups sliced strawberries
Place the eggs, milk, water, melted butter, flour, and salt in the pitcher of a blender; blend until smooth.
Blend the cream cheese, confectioners' sugar, lemon juice, lemon zest, and vanilla with an electric mixer until smooth. Gently fold in the whipped cream.
Heat a lightly oiled griddle or non-stick skillet over medium heat. Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each crepe. Tip and rotate pan to spread batter as thinly as possible. Flip over when the batter is set and the edges are beginning to brown. Cook until the other side begins to brown. Stack finished crepes on a plate, cover with a damp towel and set aside.
- To serve, fill each crepe with 1/4 cup sliced strawberries and 1/3 cup of the cream cheese filling, roll up and top with a small dollop of the cream cheese filling and more sliced strawberries.

News Story:
In Myrtle Springs a community came together to help a family in need. There was a terrible storm that flooded the streets, so residents of the area decided to help out in any way possible. They discovered an SUV flipped over with a toddler, infant, and father trapped in it drowning. The people managed to flip the car and get the family out. The father was fine, but the toddler and infant were white and motionless. A man named Tom Mitchell didn’t have the strength to lift the car, but he did give the toddler and infant CPR. They both regained consciousness and are recovering well according to the father. Read more at http://www.goodnewsnetwork.org/watch-dramatic-rescue-of-drowning-family-from-overturned-truck/.
