Picking a Perfect Pickle
Ok but wait...what about those odd, misshapen cucumbers?? What's the story there? Info & photos (below) provided by Mary B.
"When cucumber plants experience stress, fruit production is reduced and may result in stunted or misshapen fruit. Lack of water, nutrient deficiencies or lack of sunlight all contribute to reduced fruit production. Water your cucumber plants once or twice a week or whenever the soil feels dry 1-inch below the surface." (from internet source)
So..come on out and give our cucumbers some nice cool water to drink!
Fresh Basil Pesto

This pesto can be used immediately or frozen and stored for future use so you always have some on hand for a quick and easy meal or snack. Freezer instructions: Place pesto in ice-cube trays and freeze. When the pesto is frozen, transfer to a large Ziplock bag.
Ingredients:
2.5-3 cups basil leaves, gently packed
¾ cup freshly grated Parmesan cheese
3 garlic cloves, minced
1/3 cup pine nuts, toasted (walnuts work here, too)
½-3/4 cup extra-virgin olive oil
Kosher salt to taste
Ground pepper to taste
Directions
Place all the ingredients except the olive oil in a food processor. For the salt, start with ¼ teaspoon and add the rest at the end. (The final amount really depends on the saltiness of your cheese, so give it a taste first.) Pulse the mixture a few times in the food processor.
Slowly pour in the olive oil while processor is running until you reach your desired consistency.
Serving suggestions:
Serve on pizza or over steamed veggies or baked potatoes. Mix it with mayonnaise for sandwiches, combine with cream cheese for bagels, or make pesto pasta.
