Kira's Pictorial Lemon Cookies
The Introduction
This is my Italian cookie recipe made in March of 2013. I picked this recipe because I like desserts and wanted a fresh recipe to celebrate the oncoming season. The pictures below display the technique of creating these delicious cookies!
The Yield is 48 cookies.
Each person in our cooking group got about 8 cookies after giving away half of them
The Special Equipment
- Mixer
- Micro plane
- Parchment Paper
- 2 Baking Sheets
The Ingredients
The Cookies
- 3 1/2 Cups of Flour
- 2 1/2 Teaspoons of Baking Powder
- 3 Large Eggs
- 1/2 Cups of Sugar
- 1/2 Cups of Whole Milk
- 4 Ounces of Butter (Softened)
- 1 Lemon (for Zest)
- 2 Teaspoons
- 2 Cups of Powdered Sugar
- 2 Tablespoons of Orange Juice
- 2 Tablespoons of Heavy Cream
- 1/8 Orange Extract
The Method
Line Each Baking Sheet with Parchment Paper
Measure Flour and Baking Powder
Sift Four into a Small Bowl
Sift Baking Powder into Same Bowl
Crack Eggs into a Mixing Medium Bowl
Measure Sugar into Same Bowl
Beat Eggs & Sugar until they are a Lemon Color
Beat Everything With Mixer Now. Use the Basic Mixer Attatchment
Add Soften Butter
Add Lemon Zest
Beat in Flour & Baking Powder Mixture
Beat Ingredients Together until it is a Sticky Dough
Flour a Cutting Board to Roll Dough
Divide into 6 Sections
Put Each Section into Your Hands and Roll Until it is in a Rope Shape
Each rope should be 1/2 inch wide.
Here is a Rope
Cut Each Rope into 3 inch Sections
Fold Sections into Swirls
Put Your Sections on the Baking Sheets
Put Your Baking Sheets in the Oven
Set the Timer for 6 Minutes
After the 6 Minutes, Switch the Trays to the Opposite Racks
Set the Timer Again for 6 Minutes and Finish Baking the Cookies
While the Cookies are Baking, it is Time to make the Icing
Measure Powdered Sugar and Put into Mixing Bowl
Measure Orange Juice
Add 1 Tablespoon of OJ into Bowl and Beat Slowly
Add Heavy Cream And the Rest of the OJ until Desired Texture
Add Orange Extract for Extra Flavor
Continue to Beat until Desired
Once Cookies are Done, Take Them Out and Put on a Cooling Rack
Once Slightly Warm, Dip Cookies Halfway into Icing
Add Sprinkles to the Top of the Cookies

The Comments about the Recipe
The only changes made were that the icing recipe called for two little liquid so heavy cream and more orange juice were added. Orange Extract was added to add more orange flavor which the cream took away from. Nothing else would be done differently.
