Native Dishes
Moros y Cristianos/Moors and Christians (Black Beans and Rice)
The name refers to the African (black beans) and Spanish Christian (white rice) roots of Cuban culture and cooking.
1 pound black beans, dried (or 2 cups canned black beans) 1 large onion, diced 3 garlic cloves, crushed 3 teaspoons cumin, ground ½ cup green pepper, chopped Olive oil, for frying 2 cups chicken broth 3 Tablespoons tomato paste 1 cup long-grain white rice Salt and pepper, to taste

Lechon Asado
The pork is simmered in a broth until tender, then shredded. It is normally served with black beans and rice.
1 1/2poundsboneless pork chops
1 pintwater to cover
1lime, juiced
1 sprigfresh thyme
8black peppercorns
1 tablespoongarlic powder, or to taste
1 tablespoononion powder
salt to taste
2 tablespoonsolive oil
1 largeonion, halved and thinly sliced
3 clovesgarlic, peeled and sliced
1lime, juice
1/4 cupchopped fresh cilantro
Flan
It is a custard dessert with a smooth and silky texture and a mild flavor. Its consists of eggs, vanilla and sugar mixed with boiled milk and then baked. A caramel sauce is usually addded either on the top or the bottom of the dish before the egg mixture is poured in.
Arroz con leche
1 cup rice (short grain)2 1/2 cups water a pinch of salt 1 cinnamon stick 3 strips of lemon peel (or zest) 1 can sweetened condensed milk 1 can evaporated milk 1 tsp vanilla 2 tsp sugar grated cinnamon and or cinnamon stick for garnish
