Recipe of the Week! Vietnamese Noodle Soup
Ingredients:
- 8 ounces rice noodles
- 12 ounces lean beef sirloin, fat trimmed
- Kosher salt and freshly ground pepper
- 1 large onion, halved
- 1 four inch piece ginger, unpeeled, halved
- 3 cups low-sodium beef broth
- 5 star anise pods
- 1 cinnamon stick
- 4 scallions
- 2 jalapeno peppers, preferably red or green
- 1/2 cup fresh cilantro
- 2 to 4 tablespoons fish sauce
- 1 cup fresh bean sprouts
How to make:
Prepare the rice noodles as the label directs.
Meanwhile, place a large pot over high heat. Poke the meat all over with a fork to tenderize it and season with salt and pepper. Sear the meat until charred but still rare, 2 to 3 minutes per side, then transfer to a plate. Add the broth, 3 cups of water, the star anise and cinnamon, reduce the heat and simmer about 20 minutes
Meanwhile, thinly slice the scallions and jalapenos and tear the cilantro. Thinly slice the meat against the grain. Drain the noodles.
Add the fish sauce to the broth and boil 5 minutes. Discard the ginger, star anise and cinnamon stick. Remove and slice the onion. Divide the noodles among 4 bowls at the most and top it with broth, beef, scallions, cilantro, bean sprouts, jalapenos, and onion.

Club News

FCCLA The first meeting for FCCLA is Friday, Sept. 16th from 3:03 until 4:15. FCCLA is a leadership and service club. Any DMS student may join. It is a national club so there are chapters at other schools including Daphne High School. They make blankets for the severely ill children in the local hospitals, Christmas and Easter cards for the orphans at the Baptist Children's Home, participate in campus cleanups, mount the Pennies for Paws fund-raising campaign which benefits the Baldwin County Humane Society, and help with field day at Daphne East. We will gladly consider other service projects that benefit the community!
The FCCLA's SWEET POTATO COOK OFF is Wednesday 9/14 during 4th period.

This is the first year they are incorporating Focus into the peer helper curriculum. 40 students are going to the rally to get trained. reading extension is learning root words using an interactive vocabulary notebook.
Pearson (21st century skills, creative writing, career prep)- 21st century skills is going to continue learning about online safety and footprints. creative writing is working on finding main ideas in nonfiction.
Weakley (Career Tech)- Starting the architecture unit Monday, including exploring careers in architecture and building a gulf-front condo with spaghetti noodles and marshmallows.

- I like to play on my computer, talk with my friends, or work on assignments that I haven't finished.

- Mr. Kinard because he is really fun and I like science. He makes the class a lot of fun.

Where did you go to college? What degrees do you have?"I went to college at the University of South Alabama (GO JAGS!!). I hold a Bachelors and Masters in Secondary Education/Social Science. I am currently pursuing a second Masters in Gifted and Talented Education at Troy University."
How old were you when you decided to be a teacher?"A part of me always wanted to be a teacher, as my grandfather was, and I always enjoyed playing teacher, but was initially drawn to other things. After two semesters of college and realizing I had made a mistake, I officially made the major change when I was 18 years old. I knew I loved history from a young age and wanted to work in the secondary age group of education. I declared my major and have never looked back. It was a calling and I wouldn’t have it any other way."

Principal Points!
- New this year is Trojan Triumph time. It is 25 minutes in the middle of the school day dedicated to doing activities such as Compass Learning and Discovery Education that help students in their academic progress.
- As a reminder, no hoodies are allowed to be worn at school and spirit shirts are only allowed on Tuesdays and Thursdays.
- Coming soon to DMS, violin classes. They will be on Tuesdays after school and last 50 minutes.
- Mark your calendar, open house is on Monday, October 10th at 5:30. Parents will meet their child's teachers and receive ACT Aspire information.

Thursday September 1st Dms vs Foley and we won 40-0 and Trent Battle scored 5 touchdowns!!!!!
"We were the better team overall, we ended up winning, of coarse we made a few mistakes that we have made and we will have to fix them. We usually had a harder time beating Foley but this year it was different. We did really well in the defensive side of the game." -Coach Carley
"The offense scored almost too many to count, and the defense pounded the Lions, keeping them out of the end zone completely, harassing the QB and smothering the running backs completely. The hard work put in by the Trojans during conditioning paid off in the 4th quarter as the Trojans continued to crush the Lions, even as they began to tuck their tails and try to get off the field." -Coach Kinard

Short Story : The Lion and the Mouse!
Once when a lion, the king of the jungle, was asleep, a little mouse began running up and down on him. This soon awakened the lion, who placed his huge paw on the mouse, and opened his big jaws to swallow him.
"Pardon, O King!" cried the little mouse. "Forgive me this time. I shall never repeat it and I shall never forget your kindness. And who knows, I may be able to do you a good turn one of these days!"
The lion was so tickled by the idea of the mouse being able to help him that he lifted his paw and let him go.
Sometime later, a few hunters captured the lion, and tied him to a tree. After that they went in search of a wagon, to take him to the zoo.
Just then the little mouse happened to pass by. On seeing the lion's plight, he ran up to him and gnawed away the ropes that bound him, the king of the jungle.
"Was I not right?" said the littler mouse, very happy to help the lion.
Moral: Small acts of kindness will be rewarded greatly.
